Vegan Chocolate Mousse

This vegan variation of a rich chocolate favorite will be loved by vegans, vegetarians, and meat eaters alike. Serve with your favorite berries.

Ingredients

2 tbsp agave nectar
1 tbsp coconut oil
tsp kosher or sea salt
2 oz semisweet chocolate
1 tbsp unsweetened cocoa or cacao powder
2 very ripe avocados peeled and pitted

Directions

Add semisweet chocolate, coconut oil, agave nectar, salt, and cocoa powder to microwave-safe bowl. Microwave for 20–30 seconds. Allow to cool to room temperature.

Add avocado to Twister jar, and place lid on jar. Select Speed 1, and run for 10 seconds or until soft peaks form.

Add chocolate mixture, and place lid on jar. Select Speed 1, and run for 5–10 seconds or until chocolate is incorporated.

Pour into 4 ramekins, and chill for at least 1 hour.

Watermelon Raspberry Lemonade

Ingredients

1 cup raspberries
3 lemons peeled and halved
2 cups ice cubes
3 ½ cups watermelon chunks seeded
cup granulated sugar or raw agave

White Chicken Chili

This chili is packed with fiber and protein to help you feel full while providing the energy you need to accomplish everything on your to-do list.

Ingredients

16 can low-sodium chicken broth
½ avocado pitted and peeled
2 cans northern white beans drained and divided
1 ½ boneless skinless chicken breast cubed
1 can diced green chilies
1 onion diced
1 can whole kernel corn not drained
1 tsp salt
½ tsp black pepper
1 ½ tsp ground cumin
½ tsp garlic powder
½ bunch cilantro for garnish; optional

Directions

Add chicken broth, avocado, and ¾ cup of beans to the FourSide or WildSide+ jar and secure lid. Select “Sauces” or blend on a Medium to Medium Low speed for 30 seconds.

Pour into a 4-quart slow cooker.

Add remaining beans, chicken, green chilies, onion, corn, salt, black pepper, cumin, and garlic powder to slow cooker and mix well to blend flavors.

Cook on low for 8-10 hours or on high for 4-6 hours.

Garnish with cilantro and serve with corn bread or whole wheat folded tortillas.

Ginger Pumpkin Bread

This moist quick bread is full of spices and is made using whole wheat pastry flour to offer a wholesome tenderness to the loaf.

Ingredients

¼ cup almond or soy milk
cup coconut oil melted
1 cup pumpkin puree
1 medium apple cored
1 tbsp ginger root peeled
2 tsp pumpkin pie spice
1 tsp vanilla extract
¼ tsp baking powder
½ tsp kosher salt
1 tsp baking soda
1.67 cups whole wheat pastry flour
¾ cup sucanat or granulated sugar

Directions

Preheat oven to 350°F.

Add first 8 ingredients to WildSide+ jar and secure lid.

Blend on a Medium speed for 50 seconds.

Add the remaining ingredients and secure lid. Press “Pulse” 6-8 times to incorporate dry ingredients. You may need to stop blending and mix batter with a rubber scraper to complete blending.

Using a spatula, scrape down sides of jar and add batter to a greased 8”x4” loaf pan.

Bake for 45-55 minutes until done.

Note: To make in a FourSide jar, follow the same instructions, just know that the dry ingredients may not incorporate very well and need to be mixed by hand with a spoon or rubber scraper.

Dairy-Free Strawberry Ice Cream

¼ cup coconut milk
2 ½ tbsp granulated sugar
